I am still working my way through the Newstart cookbook. I think it's going to take awhile before I make all of the recipes. As we complete a recipe, I put a little check mark next to the recipe title in the index. The check marks are very sparse compared to the number of recipe titles. At least I won't be running out of recipes any time soon!

Last week, I made summer vegetable enchiladas. The filling was extremely colorful!
We enjoyed the new cheese sauce and the tomato sauce but thought the filling was better suited for stir-fry. At least the enchiladas looked pretty!
